Let’s face facts; it’s not always easy to pick a healthy snack for our family. Especially if you want your kids to eat some fresh fruit, like say, apple slices or strawberries. Making fruit rolls–or leathers–is so simple and it’s a fun way for kids to enjoy the benefits of fresh fruit without the added sugar of other shall-not-be-named ingredients of store-bought fruit snacks.
And fruit snacks aren’t just for kids. Tasty and tempting, they are a good source of nutrients and daily fruit servings for everyone.
First, you’ll need the following ingredients:

  • 2 cups fresh organic strawberries, de-stemmed
  • 1 cup organic apples, peeled and diced
  • 1 tablespoon lemon juice

In a blender, blend together all ingredients on high for about 3 minutes. You want it to turn into a thick, super smooth purée.
Pour the mix onto a baking sheet lined with parchment paper. Use the back of a spoon to evenly spread it thin.
Place the tray in your oven at its lowest temperature (typically 170º). Depending on the humidity where you live, it takes about 2 hours for the fruit to dry and get sticky. You’ll want to be careful you don’t let it go too long or it will turn hard and crack.
Remove the pan from the oven and take the parchment off of the pan with the fruit leather attached. Cut the parchment length-wise from one end to the other in about 2.5” thick strips. Roll the strips like a pinwheel and store in an air–tight container.
Now your healthy homemade fruit roll-ups are ready to delight and satisfy those pesky snack cravings.
