With Summer just around the corner, the time for healthy, keep-cool summer treats is here. Nectarines carry small amounts of vitamin C. 100 g provides 5.4 mg or about 9% of daily-recommended levels. Vitamin-C has anti-oxidant effects and is required for connective tissue formation within the human body. Strawberries are a good source of copper, potassium, biotin, phosphorus, magnesium, vitamin B6, and omega-3 fatty acids.
The Summertime Smoothie Bowl is an excellent recipe good for the summer, or anytime, loaded with nutrition and taste that is as unbeatable as a cool summer breeze–and twice as healthy. Enjoy!

Nectarine and Strawberry with Thai Basil

  • 1/2 cup fresh sliced nectarine
  • 1/2 cup frozen strawberries
  • 1/2 frozen banana
  • 1 tablespoon chia seeds
  • 1 cup coconut milk
  • 1/4 teaspoon cinnamon
  • 1 pinch sea salt
  • 1/2 cup iced green tea
  • 1 teaspoon fresh Thai basil
  • 1 teaspoon toasted young coconut

In a blender, blend together the nectarine, strawberries, banana, chia seeds, coconut milk, cinnamon and salt until very smooth. Adjust the consistency with the green tea if it is too thick. Poor into a nice bowl and garnish with the Thai basil leaves and toasted coconut and enjoy fresh!
