Coconut Cream Donuts
5 ingredient
Grain-free
No added sugar
2 ripe bananas
6 eggs, whites and yolks separated
1 cup coconut flour
1/4 cup coconut oil
2 tablespoons toasted coconut chips, chopped
1/4 cup water
Preheat the oven to 350.
In a blender, blend together the bananas, egg yolks and coconut oil until very smooth. Transfer to a bowl with the coconut flour and mix until well combined.
In a standing mixer with the whisk attachment, whip the egg whites to a medium peak. In thirds, gently fold the egg whites into the banana mixture using a spatula. Fold until well incorporated.
Grease your donut baking pan with coconut oil and spoon the dough into the donut shapes. For donut holes, you can use a cake pop pan. Mini donuts and cake pops will bake for about 15-18 minutes while regular donuts will bake about 20. When golden, remove from the baking pan and using a pastry brush, brush the tops of the donuts with a little melted coconut oil.
Sprinkle the chopped coconut chips on top and let the good times roll!
