Wednesday, June 17th, 2015 is National Strudel Day. And since we are well aware of the want–and need–for sweet treats, our friends over at Closer To Your Food have shared a recipe that’s a bit less guilty. Here is a kinder, gentler way to enjoy Paleo Strudel.
Baked Apple with Paleo ‘Strudel’ Filling

  • 6 medium semi tart apples like fuji, cored
  • 6 dates, pitted and chopped
  • 1/4 cup roasted almonds, chopped
  • 2 tablespoons dried currants (or favorite dried fruit of choice)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1 teaspoon orange zest
  • 6 tablespoons ghee or grass-fed butter
Place your cored apples in a baking dish right side up and preheat your oven to 350. In a bowl, mix together the  chopped dates, almonds, currants, spices, zest and butter using your hands until it resembles a mealy consistency.
Fill each cored apple evenly with the strudel mix. Place in the center rack of the oven and bake for about 35-40 minutes depending on the size of your apples or until they are tender and the juices start to caramelize. Eat them warm and serve with the pan drippings or chill and enjoy for breakfast!
